The word ‘buzo’ has different meanings in several languages. In Central America, it’s used to describe someone who is very good at something. Buzo is also the name of a district on the outskirts of Tokyo, while the Italians use the word to describe a man with a big belly. In Australia, we all know a boozer is slang for a pub or someone who drinks too much.
Buzo is also the name given to Perth-based chef Will Meyrick’s new restaurant in Bali, a hybrid Japanese-Italian fine casual dining restaurant. “Buzo has been on the cards for years now, but I wasn’t quite sure whether to go fully Italian or full Japanese,” Will tells The West Australian. “But when I travelled around Japan last year, I went to a lot of popular new restaurants and one thing I noted is that the style of food there is becoming less about being authentically Japanese and more about delivering really good flavours. “One of the ways Japanese chefs in Tokyo and Kyoto achieve that is by mixing Japanese with Korean, and the Japanese have always done French food very well. So I thought why can’t it be done with Italian food, something everyone loves? I was brought up in Italy, so I have Italian food in my bones.”
